Just a little bit of bacon.

My kids are sleeping right now. They’re both sleeping in the same bed. This both thrills me and scares me. It thrills me because this means that my room is mine again. If I want to go in there right now and turn on the light, I can do it. I can look for something in a dresser. I can turn on Friends loud enough that I can actually hear it (though, let’s be honest, we watch it with practically no volume and I have realized that I have memorized basically every episode from all 10 seasons anyways.) I could even put away laundry instead of leaving it down in the laundry room like I usually do, though I probably won’t. It’s a little scary though, because though PJ is pretty consistent in her night sleeping, she does sometimes wake up…and having 2 awake kids in the middle of the night doesn’t scream ‘Happy Staycation!”

Last night we went out for fancy-pants Anniversary celebration. Yummy dinner–a filet of fish, deboned tableside, and some super awesome crabcakes. I really should have taken a picture but I was busy inhaling seafood. Then after dinner we decided to really class it up, and we went to Friendly’s for dessert. Who knew they had new Create-Your-Own-Lava-Cake sundaes? Well, we ordered one of those badboys, and then we ordered a side of crispy, hot, greasy, salty bacon. Crumbled that goodness right on top. Oh. Man. I reeeeallllly wish I would have taken pictures of it (or, a picture of the server’s face when we ordered) but again, too much inhalation. If you order this, you will feel like a huge fat head, and honestly, you’ll be right. But you really won’t regret it. (Also, if you eat all this, your run the next morning will be awful. And you’ll be cursing those calories the entire time. But did I mention it was worth it?)

Friday Randoms

Ahh. Friday. Kind of loses some of the fun when you have to work at 5a on Saturday, but, it’s the weekend nonetheless. Soooo here’s some randoms:

–This was was the 4th of July. So fun!!! Took the kiddos to a parade and had so much fun. Sam LOVED it. Only, since when did 15 minutes of old cars get to be in a parade? If you aren’t dressed as an animal, riding on something with one wheel, or throwing candy at me, I’m not super interested. Here’s some pictures of my patriotic cuties:

–i think that i’m going to have to give up on having good pictures of our whole family for awhile. getting an 18 month old and a 6 month old to look cute together in a photo just doesn’t work.

–starbucks customers are nuts. like, seriously nuts. a guy emailed my boss this week asking for a free drink because when he came in, the parking lot stunk. really? what just happened?

–Sam walked up to Piper today and said, “Hi baby!” Ahhh sentences. They’re coming. He started saying hungry, brush, ice, dart, bite, and a few other things this week. He’s hilarious.

–We finally decided on what we’re doing for church!! Been hopping and looking and thinking and deciding and we’re going to be going to SPEPs evening service. It’s good for us right now and will be great because even when I have to work, I won’t have to miss going to church with my family. Now, to get Sammy used to the nursery….

–Transformers 3=really great. Almost as good as the first, way better than the 2nd. Saw the non 3d version, because I refuse to let any of my money continue this ridiculous 3d fad. I don’t like glasses I’m forced to pay for, and I don’t like when things look like they’re flying out of the screen at me. 2d is where it’s at.

–made the most ridiculous dessert ever. saw this on Pinterest, and didn’t find an excuse to make it until a cookout on Monday. Yeah, that’s cookies and oreos and brownies. And it tasted better than it looked, if that’s possible. And I gained 12 pounds.

Recipe Post: Avocado Goodness!

Sooo, here’s my first recipe post! This is for one of our most favorite things to eat–we didn’t make this up, but we edited it a little. I’ll post the link to the original recipe at the bottom in case anyone wants to compare. This dish is especially great in the summer when produce is fresh and local, plus its great because you don’t need to use the oven and make your house hot; a big plus in this crazy heat we’ve been having! It’s a refreshing, delicious salad.

So, first lets gather our ingredients.

You will need: 2 ripe tomatoes, 1 red onion, 3 limes, 1 yellow pepper, 1 jalepeno pepper, 1 can of black beans, 1 can of corn, olive oil, cayenne pepper, fresh garlic, and salt. The thing I LOVE about this recipe is all of the amounts are totally flexible. Like things super spicy? Throw in another jalepeno. Green peppers on sale? Use that instead of yellow. Or, in this case, if all you have is half of a red onion, no worries 🙂 We also love to use fresh corn in the summer instead of canned corn; but I didn’t have a chance to get any.

Ok, so first you want to take the tomatoes, peppers, and onion and chop them up. Again, this is totally personal preference–we leave ours pretty chunky, but you could dice them smaller if you prefer. Throw it all into a big bowl, and then zest one (or 2 if you prefer!) of the limes on top. You should have a bowl that looks something like this:

Next, toss in your cans of corn and beans–drained! The salad will get a dressing, so make sure you don’t put liquid in now. Give it all a good mix.

 

 

 

 

 

 

 

Next you want to put together the dressing. Whisk together your olive oil, the juice from your limes, cayenne pepper, salt and minced garlic. I just measure my oil and then add all the ingredients to my measuring glass. When it’s whisked, go ahead and add it to your salad.

The last thing is to chop your avocados. Avocados are just one of the most wonderful things in the entire world. You want to make sure they are perfectly ripe though–they should be soft to the touch, but NOT squishy. Check for any super soft spots, they will be bad. But make sure it isn’t too firm; you want it to be soft and buttery. To cut them, just slice it in half longways, stick your knife into the pit, and twist it out. Then cut the flesh into squares and scoop it out with a spoon, as pictured below.

Toss your avocado in your bowl with the other ingredients, but mix it gently because your avocado will get smushy if you mix it too much.

Now you’re looking at a fresh, delicious salad! You can eat it straight out of the bowl like this, or put it on a bed of lettuce. You could eat it with rice, or, our favorite is to eat it with tortilla chips–the extra crunch and salt are just perfection. This is also a great meal to have without any meat because the avocado and beans make it very filling. However, if you’re feeling carnivorous like we were, you can add fish, chicken, or steak. We’ve tried it all ways and it pairs well with any protein. Tonight we put some steak on top and it was DELICIOUS!

The One with the Start of Vacation!

Soo guess who doesn’t have to go work til July 6th? ME! I’m so so excited about having some vacation time to get my house in order and hang out with my kiddo! I have lots of projects planned for the house: cleaning out my kitchen cabinets and hanging our pot rack, sorting through the GIANT stacks of mail waiting to be shredded and recycled, getting caught up on laundry (literally have not had all the clothes in our house clean at once since we moved in) and doing some sorting through Sam’s clothes to figure out what we’re saving/not saving/storing/keeping out for baby, etc. I also am excited to cook REAL dinners every night instead of hotdogs or turkey sandwiches, which we’ve had waayyy too much lately. It’s going to be great! I’m also taking Sammy swimming for the first time (provided I can actually find a swimsuit…) and am looking forward to spending the mornings with him and hanging out with my baby all day!!

We have also been crazy excited about our grill–we christened it the other night with a giant delicious salmon filet, and followed it up with some grilled peaches. Take a look at these beauties…
